Mutton Biriyani

For rice follow the steps as per:



Use Ghee for everything. Meat should be fatty. Don't buy non-belly pork.

Slow cooker:
Add the 1.8kg of meat for 3 hours in high setting.
Now, add following ingredients as they get ready:
  1. 4 tsp red chilli
  2. 2 tsp pepper powder
  3. 4 tbsp coriander powder
  4. Salt
  1. 3 tbsp greek yogurt
  2. 1 കുടം garlic (or ginger garlic paste)
  3. 1 big ginger stick
  1. 2 onion
  2. 15 green chilli
  3. 6 tomato
  4. 1/4 പിടി mint leaves
  5. 1 പിടി coriander leave
  6. 1 lemon squeeze

Rice Preparation: 
  • 6 cups of ജീരകശാല (jeera) rice
  • Wash and drain the rice - need not drain very dry. Keep aside for 5 minutes.
  • Prepare 9 cups of boiling water separately.


Add 2 onion and lightly fry them - should not be brown. 
Add Turmeric powder - 1 tsp
Add the rice (and optionally fry for 5 min)
Add boiling water and mix well. 
Add salt.

Close the lid and keep in medium flame(level 4) until water is absorbed. Keep aside. Rice is only half cooked at this point.

For the following, use the fat from the cooked meat; otherwise ghee, or else coconut oil.
  1. 2 Onion: deep fry until almost black for garnishing. 
  2. Deep fry 1 പിടി raisins.
  3. Fry 6 onions until light brown
If there is water in the meat, boil it off.
Keep some fat separate to pour over the rice.

Lightly fry the spices for half a minute - until the smell comes out:
  1. cinnamon (4 pieces)
  2. ഏലക്കായ (15)
  3. ഗ്രാമ്പൂ (20 pieces)
  4. bay leaves (5)
  5. നല്ല ജീരകം (1 tsp)
  6. caraway seeds (1 tsp - used instead of shahi jeera)
Keep meat and rice two parts. Then layer it as:
  1. 1 part meat at the bottom
  2. mint and coriander leaves
  3. rice + spices
  4. second part meat
  5. rice at the top + spices (No meat on top of the rice.)
  6. Pour few tablespoons of meat fat.


Bake for 45min in 180c.

Garnish with:
  1. remaining coriander leaves
  2. the raisins
  3. deep fried crispy onion.
